TIPS FROM OUR BREWMASTER
Step 1 - Use a Finer Grind
Light roast beans are denser and have less surface area compared to darker roasts, so they require a finer grind for proper extraction. A finer grind allows for more surface contact with water, helping to extract the coffee's unique, nuanced flavors.
Step 2 - Brew at a Higher Temperature
To bring out the bright and nuanced flavors of light roast, brew at a slightly higher temperature of 200°F to 205°F (93°C to 96°C). This will help extract the delicate fruity, floral, and acidic notes without under-extracting or leaving a sour taste.
Step 3 - Adjust the Coffee-to-Water Ratio
Start with a 1:15 to 1:17 coffee-to-water ratio (e.g., 15 grams of coffee for every 240 ml of water). This will bring out the balanced, smooth profile of medium roast coffee while providing the right strength and body. Adjust to personal taste for your perfect cup.
Step 4 - Dial In Your Extraction Time
Espresso shots should be extracted in about 25 to 30 seconds. Too short, and the shot will be under-extracted (weak, sour, or watery). Too long, and it will be over-extracted (bitter and harsh). The key to getting the right shot is to experiment with the grind size and tamping pressure. If your shot is pulling too quickly, try a finer grind; if it's too slow, go coarser. Devin, who has a background in Graphic Design and serves as the Creative Director for DIA Cafe, chose the name "Wepa" because it’s an expression deeply rooted in their Puerto Rican family and culture. The word itself has many meanings but is most commonly used to express joy and excitement. When developing the brand and creative identity, Devin asked Lucia to help design the visuals for our Espresso blend. Naturally creative and a talented artist across mediums, Lucia also serves as the Lead Barista and in-house chalkboard artist at DIA Café in Greendale—making it the perfect collaboration. She handcrafted the lettering on paper, which Devin then enhanced with a rising sun motif. The bold and vibrant color treatment was carefully chosen to capture the joy and excitement the Latin slang word "Wepa" represents.

This place has FANTASTIC coffee. They brew their own coffee blends sourced from all Latin American countries. I believe they have 6 different blends. And wow— smooth and flavorful with great taste. It doesn’t taste burnt like Starbucks, yet it has rich flavor and is not watery like some other coffee companies. My favorite blend is Suavecito. It’s perfection! A+, I will never buy another brand again.
