TIPS FROM OUR BREWMASTER

Step 1 - Use a Coarser Grind
Dark roast beans are more porous and fragile compared to lighter roasts, so they tend to extract faster. To prevent over-extraction, which can lead to bitterness or an overly intense taste, opt for a coarse grind when using methods like French press or drip coffee. For drip or pour-over, a medium-coarse grind is best.
Step 2 - Brew at a Lower Temperature
For the best results, brew dark roast at a slightly lower temperature—around 190°F to 200°F (88°C to 93°C). This allows the rich, smoky, and chocolatey notes of the dark roast to come through without bringing out too much bitterness or harshness.
Step 3 - Adjust the Coffee-to-Water Ratio
A good starting point is a 1:16 to 1:18 coffee-to-water ratio (e.g., 15 grams of coffee for every 240 ml of water). Adjust to taste, but starting on the lower end of the ratio will help achieve a smoother cup with less risk of over-extraction.

Some of his works are part of the permanent collection of The Contemporary Museum of Calligraphy in Moscow. This place has FANTASTIC coffee. They brew their own coffee blends sourced from all Latin American countries. I believe they have 6 different blends. And wow— smooth and flavorful with great taste. It doesn’t taste burnt like Starbucks, yet it has rich flavor and is not watery like some other coffee companies. My favorite blend is Suavecito. It’s perfection! A+, I will never buy another brand again.

Brown Sugar Iced Latte

Add the brown sugar and water to a small saucepan over medium heat. Bring to a boil and remove from heat once the brown sugar is dissolved. Fill a large glass with ice and drizzle brown sugar syrup over the ice. Add 5oz. of brewed coffee (cooled) and milk of choice, depending on lightness preference.

Ingredients:

  • 4 tbsp. brown sugar
  • 2 tbsp. water
  • 2 cups ice
  • 5 oz. brewed coffee (cooled)
  • 2-4 tbsp. oat milk (or milk of choice)

Perfect Dessert Cocktail

Carajillo

Add 1 tablespoon sweetened condensed milk to a cup of Mucho Macho coffee, using a whisk or frother to combine. Add 1 oz. of Liquor 43 to a 12 oz. glass filled with ice. Top with the coffee and milk mixture, garnish with cinnamon.

Ingredients:

  • 1.5 oz. strong brewed coffee or espresso shot
  • 1 tbsp. sweetened condensed milk
  • 1 oz. Liquor 43 (can be substituted with rum or tequila)

“The Sweetness” Caramel Latte

La Dulzura

Brew 2 oz. of ground Mucho Macho or Babalu using a French Press. Add 1.5 oz. of caramel sauce to the bottom and sides of a mug. Pour coffee into a mug and add steamed milk slowly so the foam stays on the top. Lightly drizzle the rest of the caramel sauce on the foam, or whipped cream if using.

  • 2 oz. French press coffee
  • 8 oz. frothy steamed milk
  • 2 oz. caramel sauce
  • Whipped cream (optional)

Café con Leche

Steam the desired amount of milk and pour it into your mug. Next, add one to two tablespoons of sugar, depending on your preferred sweetness. Using a whisk or frother, create a nice foam on top of the milk. Finally, pour drip coffee over the steamed and foamed milk.
